This S’mores Cookie Recipe combines all the best flavors of smores into a thick, soft, and oh so chewy cookie you will love! Filled with rich chocolate, yummy graham cracker crumbs and ooey, gooey marshmallows this will be a family favorite in no time!

What do you get when you take everything you love about S’mores and stuff it into a soft, chewy, super thick cookie? Ummmm heaven? Well maybe not a direct ticket, but pretty much as close as you can get here on earth ha!

When I was making cookies with my kids this summer I decided to pull a super mom move and split up the dough and let them each pick out what they wanted to add to them to make their own special kind of cookie. My then 3 year old daughter picked a completely wild assortment for her cookies, think sprinkles, cranberries, coconut, cookie crumbs and pretty much the works. My son, pulled a top chef moment and knew exactly what he wanted and that was s’mores… in a cookie.

So it all went in… graham cracker crumbs, chocolate, and of course lots of marshmallows! We stirred it all in, baked them to perfection and then out they came smelling better than I can describe! The kids dug in and as surprising as it may be, my daughter’s weren’t the family favorite. It was by far my son’s S’mores Cookies that won our hearts and our taste buds!

Soft & Chewy S’mores Cookie Recipe – Step by Step

Soft & Chewy S’mores Cookie Recipe –Ingredients

  • 1 cup butter, softened
  • ¾ cup granulated sugar
  • ¾ cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp. baking powder
  • ¾ tsp. salt
  • ¼ tsp. baking soda
  • 1/2 cup graham cracker crumbs
  • 1 cup mini marshmallows
  • 1 cup chocolate chips or chopped Hershey’s bars

This is a pretty classic homemade cookie recipe with the ingredients jazzed up to include the S’mores add ins. You can play around and add in other mix ins for different combos too! Let me know in the comments if you have any more brilliant ideas!

Soft & Chewy S’mores Cookie Recipe –Instructions

  1. Preheat oven to 375°.
  2. Mix all of the dry ingredients, exceptthe graham cracker crumbs, icluding the flour, baking powder, salt and baking soda, in a medium sized bowl until blended.

    We will save the graham cracker crumbs until the end so they retain more of their texture in the cookie and don’t just disappear into the dough.

  3. Mix the wet ingredients, including the butter, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until combined well.

    If you are using a mixer for your cookies, do the wet ingredients right in the mixer bowl. I swear by my KitchenAid mixer to whip up cookies, I often get asked if you can make the my cookie recipes without it and the answer is absolutely yes! Everything that the mixer can do can also be done by hand with a little elbow grease, the mixer just adds a whole level of ease to the process. The dough in my cookie recipes mostly form to a very thick and stiff dough, so it can absolutely be done by hand, but you will need to put some power into stirring to get everything mixed well. Just consider that to be your work out!

  4. Stir in the flour mixture in thirds, mixing in between each add, until everything is well combined. The dough should be thickand not too sticky, but should not be crumbly.

    The flour content is the key to keeping the cookies super thick while they bake. If you have ever had cookies just spread thin as they bake in the oven and get super frustrated that they aren’t maintaining their shape and ending in a really nice thick, soft, chewy cookie this could be the problem!

    Make sure that your dough is thick and not super sticky. You don’t want to add so much flour that it no longer sticks together and is crumbly, but if it is super sticky you can add a tablespoon or two of more flour and mix until it is thicker and more stable.

  5. Mix in the graham cracker crumbs, marshmallows and chocolate chips until they are evenly distributed.

    Use liberty here to add more or less of what you like. If you love tons of chocolate in every bite, feel free to load it up with more or if you love Reese’s peanut butter cups in your S’mores, then by all means, chop them up and throw them in the cookies. You can’t do much wrong here!

  6. Drop dough by rounded tablespoonfuls on ungreased cookie sheets. I like to use Silpat mats to bake my cookies because they never stick and don’t make the cookies spread like other silicone mats or non stick products do. I have tried it all and these are really my favorite.
  7. Bake 10 to 12 minutes on the middle oven rack until edges are lightly golden.

    Make sure to keep an eye on your cookies so that you can take them out when they are just done. They should be golden on the edges and the middle just set, and not shiny, but also not browned all over. The cookies continue to cook a bit as they cool so taking them out when they are just done is key to the perfect cookie and not ending up with a more browned and crispy cookie.

  8. Enjoy a few warm, then cool the completely on a wire rack, then store in an airtight container.

    You can store these in the counter in an airtight container, but I love to put them in Ziploc bags and then pop them in the freezer after the first day. I think it best maintains the freshness and fresh from the oven texture. You can store them for up to three months in the freezer. And as an added bonus, out of sight, out of mind… they usually last longer in my house this way!
