Ingredients
Oopsie bread
- 3 3 eggeggs
- 4½ oz. (9 tbsp) 130 g (130 ml) cream cheese, softened
- 1 pinch 1 pinch salt
- ½ tbsp ½ tbsp ground psyllium husk powder
- ½ tsp ½ tsp baking powder
Tuna salad
- ¾ cup 180 ml mayonnaise or vegan mayonnaise or sour cream
- 4 (52⁄3 oz.) 4 (160 g) celery stalk, mincedcelery stalks, minced
- 2 oz. 55 g dill pickle, choppeddill pickles, chopped
- 8 oz. 230 g tuna in water drained
- 1 tsp 1 tsp lemon juice
- 1 1 garlic clove, mincedgarlic cloves, minced
- salt and pepper, to taste
Topping
- 2½ cups (10 oz.) 600 ml (290 g) shredded cheddar cheese
- ¼ tsp ¼ tsp cayenne pepper or paprika powder
For serving
- 5 oz. (2½ cups) 140 g (600 ml) leafy greens
- olive oil

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Oopsie bread
Preheat the oven to 300°F (150°C). Line a half-sheet pan, 13 x 18" (33 x 46 cm) with parchment paper.
Separate the egg yolks from the egg whites, placing each into two separate, large bowls.
Add the salt to the egg whites and whip together with an electric mixer until it becomes very stiff. You should be able to turn the bowl over without the egg whites moving.
Mix the egg yolks and cream cheese together with the electric mixer, and then stir in the psyllium husk and baking powder until well combined.
Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites.
Place two equal mounds of batter on the parchment-lined baking tray for each serving. Spread the batter with a spatula to form ½ " (1 cm) thick circles.
Bake on the middle rack forabout 25 minutes until golden. Set aside, and let the bread cool on the tray.
Tuna cheese melts
Preheat the oven to 350°F (175°C).
Mix together the tuna salad ingredients.
Take the baking tray with the cooled Oopsie bread and spread the tuna salad on top of each slice.
Sprinkle the cheese and cayenne or paprika on top. Bake on the middle rack for about 15 minutes, or until the cheese is melted and golden.
Serve the tuna melt with the leafy greens drizzled with olive oil.
Tip
The tuna melts can be refrigerated and later reheated or enjoyed as a chilled leftover - delicious!
Swap canned salmon or chicken for the tuna if you want to mix it up.

This looks amazing and I can't wait to try it. One little tip on whipping egg whites into peaks: it's best to start with room temp eggs. A touch of cream of tartar is also good to help those peaks along and get a little potassium kick to boot!

You can freeze the oopsie bread, but I would not freeze the tuna.

I replaced the psyllium husk with coconut flour. I wasnt a fan. It was very light and fluffy, but not right. I wonder if I did it again with the psyllium husk what the difference would be. Also gave me a guts ache with is strange because I like all those ingredients? Could the coconut flour be the ingredient that's upsetting my tummy?

I always have cloud/oopsie bread on hand. I make a batch and freeze them. So this was super easy to pull out a couple of sliced of those, make the tuna salad (didn't have some of the ingredients so just used what I had) and pop them in the toaster oven. The bread actually toasted and was crispy near the edges! The whole thing was delicious and very filling. This is a keeper for a quick lunch or easy supper!

Either there's a step not showing up in my browser, or I'm doing something wrong for the Oopsie Bread. Added 1 egg to a pyrex bowl, small pinch of salt, and set the hand mixer on it, 15 minutes later it's still a foam at the bottom of the bowl. If someone could please let me know if I'm missing a step I would appreciate it, thank you.

Are you having trouble getting the egg whites to whip up? Make sure there's NO egg yolk in the whites. Some people also add a pinch of cream of tartar to help stabilize the eggs as well.

Yeah I suspected that might be the case, I made a second batch and it was great. Made extra Oopsie bread and had that warmed up for breakfast, was yum :) Going to get some cream of tartar as well, thanks Kristin :)

These would be great on one of the chaffle recipes that are out there in stead of oopsie. Chaffles are a bit firmer and crisper.

Great recipe. I was surprised at how filling it was. I used Albacore tuna, and also seasoned with Old Bay seasoning. I substituted the dill pickle for diced jalapeños. If you like a little heat it gives a little kick with the same crunch as the pickles. The oopsie bread was perfect. This is definitely my new favorite.

Please help me understand the servings. Am I expected to eat 4 servings? Doesn’t 1 serving equal one person and I would make one serving of the receipt since it’s just me?
I am very new to Keto and just having a eating diet plan in place. My eating habits have been eat what ever I want, when I want and I’ve never counted a calorie, carb, fat, etc. in my life. This is a whole new world.Reply: #72

This recipe already has 70g fat. Tuna in oil or water is a personal preference. For a recipe like this, the extra oil may result in an unpleasantly greasy finished meal.
